GLYCEMIC INDEX
The glycemic index can help you determine the most beneficial carbohydrates. Simply put, the glycemic index is the rate, or speed, at which your body absorbs a particular carbohydrate. Researchers established the scale by feeding volunteers various foods and then measuring the change in their blood sugar level. A score of 100 was given to glucose (sugar). As the glycemic index goes up, so does the spike in your blood glucose. High glucose leads to a spike in insulin levels, which increases fat storage, hunger pangs and blood vessel injury. Spiking insulin levels also contribute to numerous disease processes. A lower glycemic index is preferred over a high glycemic index.
